My Easy Yummy Lentil Recipe

When I get home from work, I am usually famished. The need to cook a healthy, yet easy meal is crucial. I have cut down my meat consumption drastically to almost nil per week.

So, I tend to resort to my mum and grandmas handed down recipes.

I can guarantee you will never come across this quick, easy, and delicious daal (lentil) in any restaurants. Therefore, I thought of sharing this with you along with the secret ingredient – green mango!

So here we go:

Ingredients

Red Lentils – 1 cup- washed and drained

Black mustard seeds

Dried Red Chillies – 2 (just for flavour)

Green mango (the unripe smaller variety available in Asian/Indian Shops – if not sure ask for the ones that can be cooked) – wash thoroughly. Peel and slice the pulp into strips (don’t mind the hard core, preserve it) and discard the hard kernel/stone within.

Salt and turmeric (1/2 tsp)

Sugar – 1 heaped tsp

Oil – 1 Tablespoon

 

Method-

Boil the washed red lentils with salt and turmeric till mushy

Add the sliced mango strips to the boiling lentils and let it cook for a bit.

In a separate pan heat oil. Add the red chillies and let is blacken slightly. Add the mustard seeds. As soon as they start crackling, add the cooked daal with mangoes. Be careful when adding, because, it might splutter- best to turn the heat down and pour very gently.

Finally add the sugar and stir in well. Bring it boil for a couple of minutes and it’s ready!

Serve with warm basmati rice and a bit of salad on the side.
